Introduction:

CMS, also known as Carboxymethyl starch sodium, the chemical formula is[C10H19O8Na]n. It is a white or yellow powder with no odor or taste, non-toxic and resistant to mold, and dissolves in cold water at room temperature to form an electrolyte colloid solution. 

Sodium carboxymethyl starch has functions such as thickening, suspending, emulsifying and stabilizing. It is used as a disintegrant for tablets and a raw material for capsules in the pharmaceutical field, and is applied to the thickening and stabilization of products like ice cream and jam in the food industry, and as a coating enhancer and surface sizing agent in the paper industry. Its improved product replaces corn starch with potato starch and enhances performance through process optimization, which is applied in the production of pharmaceutical disintegrants. This substance is biodegradable and is widely used in industries such as petroleum, textiles, and cosmetics.

It exhibits various functions such as thickening, suspending, emulsifying, stabilizing, shaping, film-forming, expanding, preserving, acid resistance and health promotion when used in different foods. Food-grade sodium carboxymethyl starch is widely used in products such as milk, beverages, frozen foods, fast food, pastries, syrups, etc. Moreover, CMS is physiologically inert and has no calorific value, so it can achieve ideal results when used to manufacture low-calorie foods.

Carboxymethyl starch sodium (CMS) has extensive applications in the field of medicine. In terms of pharmaceutical preparations, CMS can replace gelatin and be used as raw materials for making capsules, tablets, and sugar coatings. It has strong water absorption and expansion properties. It can quickly swell in cold water, and after absorbing water, the particles expand without dissolving.
